Sasachou Natural-Fermented “Juku” Miso 750g
Sasachou's Natural-Fermented "Juku" Miso is a traditional Japanese miso matured slowly in old wooden barrels - a unique craft preserving the full depth of flavor. Made with domestic soybeans and rice, sea salt from the Seto Inland Sea, and pure spring water sourced from 早池峰山 (Hayachine-san), this miso develops a rich, layered taste: a sharp, invigorating saltiness, deep umami, and a mellow sweetness from the koji. Because it's matured naturally with no added alcohol, the fresh, full-bodied character remains intact.
Ideal for traditional Japanese cooking as well as more contemporary dishes - from miso soup and marinades to dressings and sauces - this miso brings an authentic, deep-flavored base to your meals.
- Marinades & sauces - for fish, meat, vegetables: enriches with savory depth and mellow sweetness.
- Dressings / dips - blend with oils or vinegars for a complex, umami-rich dressing.
- Simmered dishes - good for stews or vegetable dishes to add depth and richness.
- Seasoning & glazing - use as a finishing touch for a subtle but deep savoury boost.
Allergens: Contains soy
Storage: Store in a cool, dry place. Once opened, best to refrigerate or keep tightly sealed to preserve freshness and prevent oxidation or unwanted fermentation.
